Waldorf Salad

One of my favourites is a Waldorf salad and I’ve just used a bit less apple here to keep the carbs down but the celeriac is a lovely replacement.  And if you don’t have any then just stick to the apples.

  • Half an apple, sliced
  • An apple sized chunk of celeriac, sliced
  • A celery stalk, sliced
  • 100g cooked chicken, torn up
  • 30g walnuts – broken up
  • A big handful of fresh rocket
  • Mayonnaise (as above) 

Combine everything in a big salad bowl, dress with the mayo and toss well.  Delicious
