Tuna Salad Hash

This is great with a piece of toast and that’s the only reason it’s in the Burn section.  On Fast days, roll it up in lettuce leaves.

  • 1 hard boiled egg
  • 1 can of tuna in brine – drained well
  • 3 tbsp. 0% fat yogurt
  • A little Dijon mustard
  • ¼ of a red pepper
  • ¼ of a cucumber
  • A small onion or shallot
  • Some parsley and/or dill
  • A teaspoon of capers
  • Salt and pepper

This is a no cooking gem.  Flake your tuna into a bowl.  Mash the egg and add that.  Finely chop the pepper, cucumber and onion. Chop the herbs and put the lot into the bowl.  Add the yogurt, capers and mustard.  Mix it all up and season to taste.
