Smoked Salmon Platter

This is just great and I don’t really know why.  Perhaps it’s because the flavours just go together so well and it’s absorbing to eat.  It’s good with a brancake (or two) so perhaps just have yogurt for breakfast today?


Smoked salmon – 3 or 4 good slices each

2 hard boiled eggs

0% fat cottage cheese

Capers

Cucumber - sliced

A small red onion - chopped

A sprig of dill (optional)

A brancake or two each

Pepper


Apart from the brancakes (which you might have stored in the fridge), the only preparation needed is for the eggs.  Boil them, allow them to cool then separate the whites from the yolks.  Chop them separately and present them in their own little piles, one white one yellow.  Don’t ask me why, it just works.

Arrange everything else in its own little piles too, then enjoy making your own little combinations.
