Prosciutto Wrapped Chicken

This quick twist adds a lot of flavour to chicken with virtually no effort.  You could argue that the prosciutto adds a few more calories and fat too, but it’s not that much and I’m sure all the fat melts off in the oven.

  • 2 chicken breasts without skin 
  • 4 teaspoons or so of Dijon mustard
  • 4 slices of prosciutto

Preheat oven to 200 C.

Spread 2 teaspoons of mustard over each chicken breast. Wrap 2 slices of prosciutto around each breast.  If it doesn’t stick just hold it there with a toothpick.

Put the chicken into a small baking dish and bake for about 20-25 minutes.  Add a couple of dressed leaves and away you go.
