I'm a big fan of breakfast and I find that on a Fast day if I have something a bit more substantial for breakfast it's easier to skip lunch. These are also great for the weekend because you can still have a really 'good' breakfast that's also something to linger over and enjoy and so you hardly notice you're still being restrained. Once you have your, perhaps pre-made, Brancakes you can enjoy them with a range of traditional breakfasts.
Boiled Egg and Brancake Soldiers
Bring a pan of water to the boil. The bigger the better. Put your egg in. Boil it for four minutes. Take out and it’s ready.
Don’t forget the salt and pepper.
Slice your Brancake into strips and dip them in your yolk. Refresh with a little seasoning each mouthful.
Smoked Salmon and Cottage Cheese
Put dollops of no-fat cottage cheese onto two Brancakes.
Take a couple of slices of smoked salmon and lay them over the cottage cheese
Generously drizzle with fresh lemon juice and a good grind of black pepper, perhaps some chopped chives?
Beat two eggs with a little milk and some salt and pepper.
Melt a tiny amount of butter in a pan. As it sizzles add the eggs and scramble.
Serve with two Brancakes and a sprinkling of chopped chives.
Brancake and Kipper
Half a pint of skimmed milk
A kipper or kipper fillets - about 300g
Salt and black pepper
Heat about half a pint of milk in a small frying pan until it simmers. Add the kipper. If the milk does not quite cover it, add boiling water. Turn the heat down to keep the milk barely simmering, cover the pan, and poach for about 4 minutes. Put the poached kipper on a warmed plate and serve with your Brancakes.
